TOMATO CHUTNEY

1kg TOMATOES [ green or red ]

250g SUGAR

½ TEASPOON GROUND GINGER

300ml MALT VINEGAR

2 TEASPOONS MUSTARD POWDER

250g ONIONS

250g APPLES

250g SULTANAS

½ TEASPOON  SALT

¼ TEASPOON PEPPER

FINELY CHOP ONION & APPLES. SLICE TOMATOES. PUT ONIONS INTO SAUCEPAN WITH ½ CUP VINEGAR & SIMMER GENTLY UNTIL SOFT. ADD APPLES, TOMATOES,  SALT, PEPPER, MUSTARD, GINGER & SULTANAS. SIMMER UNTIL ALL INGREDIENTS ARE SOFT STIRRING FREQUENTLY. ADD REMAINDER OF VINEGAR & SUGAR. WHEN SUGAR HAS DISSOLVED BOIL STEADILY UNTIL CHUTNEY IS THE CONSISTENCY OF JAM. POUR CHUTNEY INTO STERILE JARS & SEAL AT ONCE. IF USING METAL LIDS COVER JARS WITH KLEER VIEW SEALS OR GLADWRAP.
