7 SMALL ZUCCHINI

4 LARGE WHITE ONIONS

½ CUP SALT

SLICE ZUCCHINI 1/8 INCH THICK. PEEL & SLICE ONIONS VERY THINLY.PLACE ZUCCHINI & ONION IN LARGE DISH, ADD SALT & COVER WITH ICE-BLOCKS. LET STAND FOR 3 HOURS THEN WASH WELL WITH COLD WATER TWICE.

5 CUPS WHITE VINEGAR

5 CUPS WHITE SUGAR

1 TEASPOON TUMERIC

1 TEASPOON CELERY SALT

1 TEASPOON MUSTARD SEEDS

PLACE ALL INGREDIENTS IN SAUCEPAN & BOIL FOR 5 MINUTES. ADD ZUCCHINI & ONION & BRING TO BOIL. BOTTLE & SEAL IMMEDIATELY.
