AVOCADO WITH CRAB

2 RIPE AVOCADOS

2 TEASPOONS LEMON JUICE

SALT

PEPPER

2 SHALLOTS

250g CAN CRAB

¼ CUP GRATED PARMESAN CHEESE

SAUCE

30g BUTTER

1 ½ TABLESPOONS PLAIN FLOUR

½ CUP CREAM

½ CUP MILK

1 TABLESPOON TOMATO PUREE

¼ TEASPOON CURRY POWDER

1 TABLESPOON MAYONNAISE

CUT AVOCADOS IN HALF LENGTHWISE, REMOVE STONES. SPRINKLE EACH HALF WITH LEMON JUICE, SEASON WITH SALT & PEPPER. SPOON DRAINED CRAB EVENLY INTO EACH AVOCADO HALF, SPRINKLE WITH CHOPPED SHALLOTS. SPOON SAUCE EVENLY OVER CRAB, THEN SPRINKLE WITH PARMESAN CHEESE. PLACE AVOCADOS IN BAKING DISH IN 2.5cm [1 inch] HOT WATER. BAKE IN MODERATE OVEN [180C] FOR 10 MINUTES OR UNTIL CHEESE IS GOLDEN.

SAUCE

MELT BUTTER IN SAUCEPAN, ADD FLOUR, STIR UNTIL COMBINED. REMOVE FROM HEAT, GRADUALLY ADD CREAM & MILK; RETURN TO HEAT, STIR UNTIL MIXTURE BOILS & THICKENS. REDUCE HEAT, ADD TOMATO PUREE, CURRY POWDER, MAYONNAISE, SALT & PEPPER. SIMMER 2 MINUTES, COOL.
