MINI CHICKEN & APPLE FLANS

20g BUTTER

1 ONION [finely chopped]

500g CHICKEN BREAST FILLETS [finely chopped]

1 TABLESPOON LIGHT SOY SAUCE

2 TABLESPOONS ORANGE JUICE

½ CUP SEASONED STUFFING MIX

2 SHEETS READY-ROLLED SHORTCRUST PASTRY

2 APPLES [peeled & cored]

1/3 CUP APPLE JELLY [warmed]

LIGHTLY GREASE 6 SHALLOW 10cm FLAN TINS. HEAT BUTTER IN PAN, ADD ONION & CHICKEN, COOK, STIRRING UNTIL CHICKEN IS LIGHTLY BROWNED. STIR IN SAUCE & JUICE. REMOVE FROM HEAT, STIR IN STUFFING MIX; COOL.

CUT 3 ROUNDS FROM EACH PASTRY SHEET LARGE ENOUGH TO LINE PREPARED TINS; TRIM EDGES. DIVIDE CHICKEN MIXTURE BETWEEN TINS. CUT APPLES INTO THIN WEDGES, PLACE ON CHICKEN MIXTURE; BRUSH WITH SOME OF THE APPLE JELLY.

JUST BEFORE SERVING, PLACE TINS ON OVEN TRAY, BAKE IN MODERATE OVEN [180C] FOR ABOUT 1 HOUR OR UNTIL WELL BROWNED. BRUSH FLANS WITH REMAINING JELLY BEFORE SERVING.
