8 EGG WHITES

2 ¼ CUPS CASTER SUGAR

1 TEASPOON VANILLA

1 ½ TEASPOON WHITE VINEGAR

BEAT EGG WHITES UNTIL SOFT PEAKS FORM. GRADUALLY ADD SUGAR BEATING TO DISSOLVE. ADD VANILLA & WHITE VINEGAR & BEAT APROXIMATELY 1 MINUTE. GREASE PAVLOVA PLATE & DUST WITH CORNFLOUR. PILE MIXTURE ON PLATE & COOK IN OVEN AT 200C FOR 20 TO 30 MINUTES THEN REDUCE HEAT TO 125C FOR APROXIMATELY 1 HOUR. ALLOW TO COOL IN OVEN WITH DOOR AJAR. WHEN COOL CUT AROUND TOP WITH A SHARP KNIFE & ALLOW TOP TO FALL INSIDE. FILL WITH WHIPPED CREAM & FRUIT.
