MUSTARD SEED & TOMATO SAUCE

2 TABLESPOONS OLIVE OIL

1 SMALL [80g ] ONION [finely chopped]

2 CLOVES GARLIC [crushed]

6 MEDIUM [450g] EGG TOMATOES [peeled, chopped]

2 GREEN SHALLOTS [chopped]

½ CUP [125ml] DRY WHITE WINE

2 TEASPOONS SALT

2 TEASPOONS BROWN SUGAR

2 TEASPOONS TOMATO PASTE

3 TEASPOONS SEEDED MUSTARD

HEAT OIL IN MEDIUM PAN, ADD ONION & GARLIC, COOK STIRRING UNTIL ONION IS SOFT. ADD TOMATOES & COOK UNTIL TOMATOES ARE SOFT. BLEND OR PROCESS TOMATO MIXTURE UNTIL SMOOTH; STRAIN & DISCARD SEEDS. RETURN TOMATO MIXTURE TO PAN, ADD REMAINING INGREDIENTS. BOIL, UNCOVERED, ABOUT 5 MINUTES OR UNTIL SAUCE THICKENS SLIGHTLY. POUR SAUCE INTO HOT STERALISED BOTTLES; SEAL IMMEDIATELY.
