¼ CUP CRABAPPLE JELLY

1 TABLESPOON PORT

TOAST WAFFLES. TOP  WITH TURKEY & SPROUTS THEN COMBINED COTTAGE CHEESE & CHIVES, COMBINE CRANBERRY SAUCE, CRABAPPLE JELLY & PORT. STIR OVER LOW HEAT UNTIL WELL MIXED. SPOON OVER WAFFLES JUST BEFORE SERVING.

PLACE FLOUR IN BOWL. ADD LEMONADE & CREAM. MIX TOGETHER. LINE TRAY WITH BAKING PAPER. PAT DOUGH OUT TO FIT SCONE TRAY. CUT WITH KNIFE. BAKE 200C FOR 12 MINUTES.

6 CROISSANTS

¼ COOKED CHICKEN

1 BACON RASHER [chopped]

2 TABLESPOONS SLIVERED ALMONDS

1 TABLESPOON CHIVES [chopped]

½ CUP SOUR CREAM

TOAST ALMONDS IN MODERATE OVEN UNTIL LIGHT BROWN [ABOUT 8 MINUTES]. REMOVE CHICKEN MEAT FROM BONES & CHOP FINELY. COOK BACON UNTIL CRISP, DRAIN. COMBINE CHICKEN, BACON, ALMONDS, CHIVES & SOUR CREAM. FILL CROISSANTS & HEAT IN MODERATE OVEN [180C] FOR 10 MINUTES.

CROISSANTS CAN BE FILLED, FROZEN THEN HEATED UNCOVERED IN MODERATE OVEN FOR 15 TO 20 MINUTES.

60g MUSHROONS [chopped]

COMBINE MAYONAISE, SOUR CREAM & MUSTARD. COOK BACON UNTIL CRISP. SPREAD MAYONAISE MIXTURE OVER ONE HALF OF EACH CROISSANT. SPRINKLE  WITH BACON & SHALLOTS, TOP WITH MUSHROOMS THEN OTHER HALF OF CROISSANT. BAKE UNCOVERED IN MODERATE OVEN [180C] FOR ABOUT 10 MINUTES.
