BOILED FRUIT CAKE

[NORMA’S KITCHEN] 

3 CUPS MIXED FRUIT

450g CAN CRUSHED PINEAPPLE

1 ½ CUPS SELF RAISING FLOUR

2 TEASPOONS BI-CARB SODA

2 EGGS [beaten]

GREASE 20cm SQUARE CAKE TIN & LINE WITH BAKING PAPER, BRINGING PAPER UP SIDES OF TIN.

PUT FRUIT & PINEAPPLE IN BOWL & MICROWAVE ON HIGH FOR 2-3 MINUTES. ALLOW TO COOL THEN ADD FLOUR, BI-CARB & EGGS.

POUR MIXTURE INTO TIN & BAKE IN MODERATE OVEN [180C] FOR 35 TO 40 MINUTES.
